2-Day Hunter-Gather Course - £500 per Person

Trossach’s National Park

Welcome to the Loch Lomond &Trossach’s National Park, arguably Britain’s most beautiful natural resource, and, at the right time of the year, Britain’s most abundant natural larder.

This 2 day course is a hands-on opportunity to learn how to make the most of that larder. We will show you techniques and tips that will equip you with the skills to make restaurant quality meals from the food you find in the woods!

The first day will introduce you to the principals of hunting deer. Under the supervision of an experience deer stalker you will be given a step by step guide to stalking deer, beginning with spying the deer on the hill, checking conditions, planning a route to approach the deer and finally getting within shooting range of a deer. However, on this course, we will not take a shot.

In the afternoon you will be shown how to butcher a deer carcass… from graloching, to skinning, and then the specific cuts of meat.

On the second day you will be taken into the hills around Balquhidder with a local guide, to forage for herbs, plants and vegetables.

With these foraged foods, and the venison from the day, before we will then cook a feast of food before returning home.

At night you will stay at The Crags Hotel in Callander, a traditional, family run Scottish pub… here you will have an excellent breakfasts &evening meals prepared by the owner!
